- GRANNY SMITH APPLE 4 LARGE APPLES- PEELED CUT INTO MEDIUM ROUGH CHOP
- DRIED CRANBERRIES
- VIOGNIER (2 CUPS)
- BROWN SUGAR (1CUP)
- CINNAMON 2 TBLS
- TAPIOCA FLOUR (2TSP)
DIRECTIONS
- MAKE CRUMBLE: BY HAND OR MIXER START MIXING BUTTER OATS, FLOUR UNTIL THE DRY MIX FEELS AND LOOKS CHUNKY AND AS THE BUTTER PULLS TOGETHER WITH DRY INGREDIENTS, 2-3 MIN, THEN ADD BROWN SUGAR, LEMON ZEST, AND SALT, TOASTED PECANS AND AGAIN TRY NOT TO OVER MIX. ANOTHER 2 MIN OR SO SO it’s a CRUMBLE (OTHER ADDITIONS YOU CAN ADD ARE DRIED COCONUT FLAKES AS A VARIATION, AND GF FLOUR OR COCONUT FLOUR) SET ASIDE, YOU CAN MAKE AHEAD AND STORE IN ZIPLOCK OR AIR TIGHT CONTAINER IN FREEZER.
- BROWN BUTTER: MELT BUTTER MEDIU/ HIGH HEAT UNTIL IT BROWNS, TURN OFF HEAT AND MIX IN ¼ CUP MAPLE SYRUP BY STIRRING CONSTANTLY UNTIL THICKENS. SET ASIDE AS IT SHOULD GET TO ROOM TEMP.
- MEANWHILE- IN SAUTEE PAN, MAKE APPLE FILLING: PEEL APPLES MEDIUM CHOP OR CUT INTO SLICES, ADD CRANBERRIES, BROWN SUGAR, CINNAMON HEAT UNTIL WINE AND SAUCE STARTS TO THICKEN AND APPLES START TO SOFTEN A LITTLE BUT SHOULD STILL BE FIRM.
- IN SEPARATE BOWL, ADD THE TAPIOCA FLOUR TO COLD WATER AND MIX WELL UNTIL ABSORBED INTO WATER. FOLD INTO APPLE FILLING AND SLOW COOK LOW TEMP FOR 8 MINUTES UNTIL THICKENS TO COAT WOODEN SPOON. (ANOTHER VARIATION IS TO SOAK APPLES IN CINNAMON AND VIOGNIER FOR 1-2 DAYS BEFORE STARTING THE RECIPE)
- IN A GREASED GLASS BAKING PAN, ADD WARM REDUCED APPLE FILLING, DRIZZLE BROWN MAPLE BUTTER OVER TOP AND THEN CRUMBLE OVER THE TOP TO COVER ENTIRE AMOUNT OF APPLES, THICK COAT IS GOOD. BAKE 350 FOR 35-45 MIN IF CHECK TO SEE IF THE FILLING IS THICKENING AND ADD MORE TIME IF NEEDED. ALL OVENS HEAT DIFFERENTLY, IF USING CONVECTION MODE IT MAY COOK FASTER.
