SOY FALAFELS WITH LEMON, MINT & CILANTRO

We just released our 2018 Brut Rosé a couple weeks ago. Generally speaking, Brut Rosés are some of the most food-friendly wines available, pairing well with just about anything. Pink bubbles and a light appetizer is a great way to kick off a meal. For this particular pairing, we think the acidity in the wine balances out the saltiness and spices in the falafel, while the notes of rose water in the wine are a perfect match since this is a Middle Eastern dish and rose water is a popular accompaniment- and sometimes ingredient- in this type of cuisine. SECOND COURSE
BROILED SEA BASS WITH ASIAGO RISOTTO
Paired With: SUNSTONE 2019 SAUVIGNON BLANC
Sea Bass has a delicate flavor that begs for a young, unoaked white wine with some minerality. Enter…our 2019 Sauvignon Blanc. The other reason our Sauvignon Blanc pairs well with this dish is that the lighter and drier the white wine, the better it will contrast with the strong flavors of the Asiago cheese in the risotto. Perfection!

THIRD COURSE
GINGER & BLOOD ORANGE CHICKEN
Paired With: SUNSTONE 2018 PINOT NOIR, SBC
Chicken is most commonly paired with white wines, but it also works well with light reds like Pinot Noir, depending on how it is prepared and what part of the chicken it comes from. This recipe calls for chicken thighs, which typically have darker meat than breasts. As a general rule, the darker the meat the better pairing it is for a red. Also, the undercurrent of orange blossom in the wine matches well with the blood orange flavor and the orange zest in the recipe. Bon Appetit!

No Valentine’s Day Dinner would be complete without chocolate! This decadent dessert combines chocolate with fresh chopped cherries and many other complementary ingredients, including port wine. The red and black fruit notes in the wine perfectly complement the cherries in the recipe while the baked character in the wine like pizza crust and fruit tarts complements any baked good like a cake. You’ll make this one over and over again!
