FIRST COURSE
QUESO FRITO (FRIED CHEESE)
Paired With: SUNSTONE 2019 SAUVIGNON BLANC
Queso Frito is a delicious fried cheese dish popularized in Spain but also made throughout parts of South America, Latin America, and Mexico. Generally speaking, white wines typically match with a much wider array of cheeses than red wines because they have no tannin. And while you can pair this dish with quite a few different whites, we think it is a good match for our 2019 Sauvignon Blanc because the citrus notes and acidity in the wine will cut through the saltiness of the dish.

SECOND COURSE
ARTICHOKE MUSHROOM SOUP WITH PANCETTA
Paired With: SUNSTONE 2019 SYMPHONIE DU SOLEIL
Artichokes are notoriously challenging to pair with wines because they contain a compound called cynarin that can trick your palate into thinking a wine is sweeter than it really is (there is a much longer scientific explanation!). To combat the increased perception of sweetness, dishes containing artichokes should be paired with a dry white wine. In this case, we recommend our Symphonie du Soleil, which is a Rhone-style blend made primarily from Viognier. This is a creamy soup, which complements the creamy mouthfeel of the wine. The lemon and citrus notes in the wine also accent the lemon rinds used in the soup. This is a great dish to bridge the seasonal gap between Winter and Spring because it is warm and comforting but refreshing!

THIRD COURSE
MUSHROOM STUFFED QUAIL WRAPPED IN GRAPE LEAVES
Paired With: SUNSTONE 2019 MOURVEDRE, SYV
We just released our new Mourvedre last month and the response has been very positive. While Mourvedre is primarily used as part of Rhone-style “GSM” blends (GSM standing for Grenache, Syrah, Mourvedre), it is becoming more popular as a standalone varietal. Mourvedre is great when paired with anything that is roasted, gamey, or earthy. This dish combines all three of those elements! The mushrooms complement the earthy palate of the wine, while the grape leaves balance the notes of tobacco leaves and black tea leaf in the wine. Enjoy!

FOURTH COURSE
CHOCOLATE BLUEBERRY BREAD PUDDING
Paired With: SUNSTONE 2018 CABERNET SAUVIGNON, SBC
Dark chocolate is a good pairing for Left Bank Bordeaux varietals like Merlot and Cabernet Sauvignon. Add in some berry elements and it becomes close to perfect! The blueberries in this dish match well with all the red and black fruit notes in the wine, while the nutmeg and cloves complement those same notes in the wine. You are going to end up making this decadent dessert over and over again!
